Manakish is mostly known in the Levant, especially Lebanon, Syria, Jordan and Palestine. They are kinds of pastries, usually the name Manakish is referred to thyme but nowadays the other types of pies such as cheese pies are called Manakish as well.
It is a thin disks of dough where different sauces are applied to it (thyme and olive oil, cheese, hot red pepper and olive oil) laid in a wooden rack/holder then placed in an oven at high temperature to be ripen, and then pull using iron holder/rack and served to be eaten hot. The ovens are designed after extensive studies and researches. They are found in different models, shapes and sizes due to demand: stainless steel or bricked, functions on gas piped burners , diesel burner or charcoal.
